About the Role
Works with the Certified Dietary Manager to oversee the Plaza dining rooms, serving areas and pantries to maintain or exceed hospitality and service standards

What You'll Do

  • Converses with members to assure satisfaction with their meal and assures substitutions are made as needed.
  • Complete daily opening and closing supervisor checklist
  • Checks temperatures and documentation of pantry meal items in the steamtable before a meal
  • Randomly checks temperature of food coming from the main kitchen before it goes to the healthcare satellite kitchens.
  • Confirms accuracy of the carts against the production sheets.
  • Assures timely meal delivery and plate preparation in all dining areas
  • Assures that the Culinary team has the Production Sheets on a timely basis.
  • Prints all menus for residents in the Glen, The Arbors, Garden View and Ascend, as needed. Makes room changes, diet, and member admit and discharge changes on MealSuite as needed. Makes changes on menu as needed and prints new ones. Places weekly menus out on floors for the members and family.
  • Prints select menus upon request. Indicates food preferences if needed on the production sheets for the cooks.
  • Creates and maintains employee work schedules under the supervision of the CDM and keeps him/her updated to changes. Assures that all employees are aware of any deviations from their normal schedules.
  • Keeps a record of all tardiness/absences.
  • Returns employee call-in messages promptly in order to fill shift positions as needed. Cover any areas that are having staff shortages.
  • Oversees that member dining menu are updated and clean sheets are inside menus inserts.
  • Prepare menus/signage for service for all meal periods as needed
  • Attend weekly Culinary Leaders meeting
  • Immediately communicate any concerns to leaders that need to be escalated for resolution
  • Train new dietary aides or healthcare servers
  • Maintain inventory of satellite kitchen pantries and communicate orders, shortages to Executive Chef or Culinary Director
  • Set tables, bus tables, and wash off tables after meals in accordance with established guidelines and procedures.
  • Orders supplies and oversees restocking making sure all items are dated.
  • Oversees the preparation of trays and the service of food according to menus and assures that following of therapeutic diet orders.
  • Assures correct table set up (clean, neat appearance with silverware and glasses all wiped clean. With all centerpieces pointing the same direction and all tables matching.
  • Maintains or exceed standards of appearance, cleanliness, hygiene, and health standards in the Plaza kitchens and dining rooms.
  • Follows and checks the daily and weekly cleaning schedules, posts new ones as needed.
  • Keeps a record of all missed clean-up duties by employees.
  • Attends all in-services.
  • Uses close out check list for accuracy of clean-up sheets for each shift for the employee kitchens and turns into CDM dietary office.
  • Other duties as assigned by the Supervisor.
  • Reports back to CDM daily any concerns and/or activities of the day, and your progression on your responsibilities.
  • Fill out the End of Day Report covering your responsibilities and turn in to CDM.
  • Prepare beverages and foods as required.
  • Serve food in dining rooms or other areas as required.
  • Serve beverages to residents as required.
  • Prepare steam table as required
  • Prepare hot cart and serve food; clean and sanitize carts as required
  • Wash dishes; scrape and rack dishes; sort, stack, store clean dishes as required
  • Mop, sweep, and clean work area as required
  • Take out trash as required
  • Wrap silverware as required

Attend and participate in meetings and in-service training

What You'll Bring to the Team

  • Requires ability to communicate verbally with residents, families, visitors and co-workers. Requires ability to make self clearly understood by others.
  • Requires ability to understand and follow basic written and oral step-by-step instructions.
  • Requires ability to move food serving and preparation equipment as needed, using up to 50 pounds of force occasionally, and/or up to 20 pounds of force frequently, and/or up to 10 pounds of force continuously to move objects.
  • Work deals mostly with objects, equipment and/or machines where the seeing job is at or within arm's reach. Depth perception and field of vision (peripheral) are of some importance.
  • Requires ability to walk, sit, stand sometimes for prolonged periods of time. Requires ability to turn, stoop, kneel, crouch, bend, reach, push, pull, handle, and carry or otherwise manipulate objects.
  • Requires ability to safely utilize kitchen equipment and recognize differences in sound generated by equipment or machinery which may indicate operation problems or safety concerns.
  • Requires ability to work under close supervision performing routine, standardized tasks.
  • Requires ability to perform tasks with due consideration for residents in vicinity and ability to cooperate and work with other employees.
