Job Description

Job Title: Dietary

Report to: Administration

ORGANIZATION

  • The Dietary Department is an organized department directed by qualified personnel and integrated with other departments.
  • The Dietary Department will render the best possible nutritional care and service to the residents and their guests, using their knowledge and skills required to meet daily nutritional needs.
  • The Dietary Department will develop and maintain acceptable standards of food preparation, sanitation, safety, and allotted costs
  • The Dietary Department will work closely with all other departments, maintaining the spirit of cooperation with the other departments and will abide by the policies set forth in order to maintain quality of care.

PERSONNEL

  • The Dietary Department will be adequately staffed to carry out the duties and responsibilities of the department.

FOOD PURCHASES

  • The food will be purchased on Mondays by the Administration staff or by an assigned dietary employee

FOOD PREPARATION

  • All food preparation will be carried out under the highest standards of safety and sanitation. Strict production controls are used to eliminate food waste and assure sanitary food handling.
  • All food is prepared to conserve nutritive value, flavor and appearance.
  • Continuous effort will be made to reinforce portion control through in-service education and posting of relevant information
  • A meat thermometer will be used in cooking whole meats
  • Hands will be washed on entering the food preparation area and at any time they become soiled

NUTRITION

Nutritional need of each resident will be met in accordance with recommended allowance in accordance to the residents Physician Orders.

MEAL SERVICE

There will be at least three meals serviced daily at regular intervals. Breakfast is served at 8AM, lunch at 12PM and dinner at 5:15PM.

MENUS

All menus are written weekly and posted for the residents

The menus are planned on a four-week cycle and substitutions are allowed to fit the residents needs.

Job Type: Full-time

Pay: $13.00 - $14.00 per hour
