The Bryce Jordan Center is seeking an Executive Chef (Culinary Support Specialist 4) to oversee all culinary and food safety aspects at the Bryce Jordan Center Catering/Concessions Operations.

Under the supervision of the General Manager of Food and Beverage, this position will create an exceptional dining experience by producing outstanding food in all areas of the Bryce Jordan Center Food and Beverage Operations including, Pegula Ice Arena, Beaver Stadium and other locations around University Park Campus.

Responsibilities for the Executive Chef include but are not limited to:

  • Lead a high level of production output without compromising quality or customer service. Participate and monitor the preparation/service of food to ensure consistent quality. Maintain desired quality and quantity of food throughout events. Work closely with the Managing Chef and technical service staff to ensure quality food presentation/appearance and desired portion controls are met. Manage events and ensure a quality customer service experience for internal and external customers by interacting with customers, employees, guests, and visitors.
  • Oversee quality and cost controls, develop recipes and menus, and manage inventories. Plan, design, write, cost, train, and manage all menus; restructure menus to reflect sustainability, market shifts, seasonal availability, student/customer preferences; create globally inspired menu selections and heritage month menus; create special occasion menus for weddings, parties, banquets, concessions, athletic training tables, premium clubs & suites, and off-premise catering events.
  • Responsible for the financial administration including cost containments and maximization of revenue sources. Inventory and purchase food and non-food supplies. Conduct and control product inventory and update product list regularly. Work closely with the Purchasing department on quality, freshness, affordability, and accessibility of food products.
  • Evaluate and plan for maintenance of equipment and facilities, recommend purchases of new equipment and participate in renovations/facility design upgrades; prepare work orders for equipment repairs.
  • Manage, hire, train, coach, supervise, discipline, and evaluate Full-Time Managing Chef and Technical Service Staff adhering to Collective Bargaining Agreement provisions & participate in hearings/proceedings. Develop and implement Standards to improve production/services methods, equipment performance, and use of equipment to increase efficiency and safety of operation. Provide leadership and training of staff in high-end display work including action stations, served multi-course meals, buffet set-up, hors d’oeuvres, and Garde Manager work as required. Must have the ability to cook with and without recipes when necessary.
  • Keep abreast of and oversee food safety, sanitation, and other regulatory requirements; develop operational changes, policies, and procedures; establish standards; develop and conduct training; ensure compliance.
  • Research, develop, and test new products, recipes, and equipment for all Bryce Jordan Center Food & Beverage Areas. Actively participate in university menu planning, sampling, and introducing of new products. Work closely with the Corporate Executive Chef of the Culinary Support Services office on new recipe/product research and implement improved preparation methods and techniques.
  • Coordinate the Culinary extern program and the PSU School of Hospitality Management internship program at the Bryce Jordan Center.
  • Distribute event information, attend meetings, and assist Catering Management with the promotion of events.
  • Interpret and maintain University and departmental policies, procedures, and services to students, staff, and the public as required. Respond to inquiries and comments from staff, students, and the public.
  • Participate in department meetings as assigned, as well as, department and personal professional growth activities. Continuing education in the culinary arts through formal coursework, workshops, food shows, and conferences.
  • When necessary, open/close the building or manage/produce meal period.
  • Perform other duties as assigned.

The successful candidate will be a strong leader with demonstrated relationship-building skills. Visibility and interaction with various University stakeholders is an essential aspects of this position.

TYPICAL EDUCATION & EXPERIENCE

6+ years related experience

Bachelor’s Degree or higher preferably in a culinary arts related discipline

Or an equivalent combination of education and experience
