Job description
The AM sous chef oversees all aspects of the kitchen operation during the hours they are there. They are responsible for accomplishing prep quality for the restaurant + boats, putting up the order, unifying and leading the BOH staff as one kitchen, controlling food cost + cleanliness and labor. In addition, the sous chef works in concert with the executive chef to train, retain and inspire BOH staff as well as problem solve on a regular basis. The Sous Chef reports directly to the Executive Chef.
