- Prepares meals according to planned menus and standardized recipes in a sanitary manner to ensure the utmost in quality with minimum waste.
- Manages, coordinates, assists and schedules the Cooks and Dishwashers. This includes:
- Working with the Executive Chef & Director of Dining Services and HR to recruit, interview and hire staff.
- Continuously training staff on cooking and serving quality food, working with seniors, and the point of sale system.
- Administering the performance management system for all employees managed by the Sous Chef.
- Works with the Executive Chef & Director of Dining Services, Dining Services Manager/Supervisors and the Resident Dining Committee to handle and respond to resident concerns and requests regarding food quality, service and related matters.
- Provides the Executive Chef & Director of Dining Services and Dietitian continuous feedback from residents on food preparation, presentation, taste and variety.
- Works with and follows-up with department managers, supervisors, staff members and regulatory personnel to address and meet the residents’ needs and concerns in regards to food in a timely manner.
- Trains kitchen staff including Cooks, Pantry, and Dishwashers in all duties and responsibilities of given position and be able to step in and cover those positions during busy periods and in emergencies. Responsible for monthly in-services
- Networks and establishes relationships with counterparts at other organizations within the Food and Beverage Industry and stays abreast of the latest trends.
- Assists the Executive Chef & Director of Dining Services in analyzing information concerning facility operation such as daily food counts, resident attendance and labor costs to prepare budget and maintain cost control of food service operation.
- Develops menus and recipes for meal cycle, banquets, specialty events and special requests within time frame specified to meet both regular and special therapeutic diet.
- Revises and upgrades menus and recipes as necessary to be in compliance with seasonal items, current trends and/or residence request to change.
- Ensures that correct procedures of receiving and inspecting of food, materials and supplies are being followed to ensure that quality and quantity of goods meet established standards and specifications, and are stored in appropriate areas.
- Ensures food products are being cooked and served in compliance with State of Hawaii Department of Health sanitation standards.
- Plans and develops weekly schedule for kitchen personnel engaged in daily production according to budget allowed for staffing.
- Exercises caution and good safety judgment in uncertain conditions or situations, and report and/or correct hazards, potential or actual.
- Maintains assigned work station, supplies and equipment in a safe and sanitary condition, and ensures all infection control policies and procedures are met.
- Performs the necessary duties for emergency drills and situation such as fire, fire alarms, hurricanes, and other possible emergencies as outlined in the All Hazards Emergency Operations Plan.
- Interacts with residents/clients with patience, understanding and kindness in accordance with Arcadia Family of Companies’ mission and core values.
