We currently have a full-time Executive Pastry Chef opportunity to join the team of world class Executive Chef, Laurent Pillard! You would be working alongside Chef Laurent, a Michelin Star awarded Executive Chef, and his dedicated culinary team.


We are seeking an experienced pastry professional who has experience with wedding cakes, banquets and a la carte. We strive to be the best in our quality of food, service, and facilities. We have a positive work environment with a dedicated, hardworking, fun-spirited team. Our Executive Pastry Chef fosters a teaching environment with the goal of developing tomorrow’s leaders. Must be available during the week, evenings, weekends, and holidays.


Essential Functions:

  • Exhibits creative baking and decorating talents by personally cooking food items while leading the staff in preparing quality and consistent pastries for all areas.
  • Manages day-to-day operations, ensuring the quality, standards and meeting the expectations of the customers on a daily basis.
  • Supervises and coordinates the activities of the pastry staff. Understands pastry staff positions well enough to perform duties in team members absence.
  • Maintains the productivity level of pastry team by ensuring team members understand expectations and parameters.
  • Assess team member satisfaction by soliciting team member feedback and utilizing an "open door" policy to identify and address concerns.
  • Emphasizes member satisfaction and excellent customer service during all departmental meetings and focuses on continuous improvement.
  • Trains staff on menu items including ingredients, preparation methods and unique tastes.
  • Reviews staffing levels to ensure that member service, operational needs, and financial objectives are met.
  • Recognizes superior quality products, presentations, and flavor.
  • Maintains food preparation handling, temperature of food, and correct storage standards.
  • Maintains purchasing, receiving, and food storage standards.
  • Supports procedures for food & beverage portion and waste controls.
  • Ensures compliance with all applicable laws and regulations.
  • Prepares and cooks baked goods of all types on a regular basis for members as requested and Club events.
  • Checks the quality of raw and cooked food products to ensure that standards are met.
  • Determines how pastries should be presented and creates decorative food displays.
  • Trains pastry team in safety procedures and supervises their ability to follow loss prevention policies to prevent accidents and control costs.
  • Utilizes interpersonal and communication skills to lead, influence, and encourage others.
  • Advocates sound financial/business decision making, by demonstrating honesty, integrity, and leading by example.
  • Encourages and builds mutual trust, respect, and cooperation among all team members.
  • Works to continually improve member and team member satisfaction while maintaining the operating budget.
  • Leads development and training of pastry team to improve results while maintaining standards. Must ensure sanitation and food standards are achieved.
  • Performs other duties as assigned.


Qualifications:

  • A minimum of 5-7 years as an Executive Pastry Chef with experience in a high-quality property, luxury brand hotel, or high-volume private club setting comparable to the scale and sensibility of Charlotte Country Club.
  • Must have a formal pastry education with a preference in pastry certifications (or in pursuit of certifications) through organizations such as the American Culinary Federation.
  • Ability to present a range of pastry styles, and an in-depth knowledge of pastry and industry trends; will demonstrate constant research and development into food products and ideas to stay current.
  • Creativity with pastry menu development and membership pastry programs, along with the ability to understand and implement a program that exceeds the expectations of the membership is critical.
  • Equal strength in high volume pastry banquet production and overseeing excellent a la carte programming.
  • Strong knowledge of maintaining an organized, efficient, safe and properly flowing kitchen especially with coordinating higher volume banquet production.\
  • A team spirit and positive attitude are a must.
  • Able to work flexible schedule including days, evenings, weekends, and holidays as a full-time employee.
  • Perform physical demands of the job, including standing, lifting and walking stairs daily.
  • High standards of CCC as a workplace.
  • Experience in restaurant operations.
  • Experience in wedding cakes.


Physical Requirements

  • Ability to physically perform the job including lifting up to 50 lbs. regularly.
  • Ability to stand, walk, and sit for extended periods of time.
  • Ability to taste and smell various types of cuisine.
