To oversee the daily operation of the dishwashing area of the culinary department. Assist with the gathering of china, glass and silver, supplies for banquet functions and maintain the proper inventories of necessary supplies.

  • Maintain clean, organized and sanitary kitchen facilities in the resort including kitchen equipment, hoods, walls, floors, employee cafeteria and locker room.
  • Train and supervise dishwashers in proper sanitary procedures, practices, chemical usage and accident prevention.
  • Observes and evaluates dishwasher’s performance to devise methods of improving efficiency and guard against loss, theft and waste.
  • Works with the front of the house F&B management team to ensure proper procedures are followed for outlet bussing and banquet bussing to maintain a smooth working operation.
  • Assists with dish and pot washing in heavy demand situations.
  • Re-assigns dishwashers as necessary to maintain a smooth-running safe operation.
  • Maintains kitchen hand washing stations according to Wisconsin health code maintain proper supplies of hand soap and hand towels, a covered waste receptacle and that proper signage are posted.
  • Assist with the monthly inventory of C, G, S and report shortages and breakage as it occurs.
  • Assist the kitchen staff with the set-up of outdoor functions and catered events.
  • Maintains chemical supplies and necessary cleaning equipment for dishwashing and kitchen areas.
  • Reports disciplinary issues to the Sous Chef and/or Executive Chef.
  • Punches in and reports to the Executive Chef and/or Sous Chef on time and in full uniform for each shift. Obtains Manager’s approval prior to punching out.
  • Performs other related duties as assigned by the Executive Chef and/or Sous Chef.

Requirements:
  • At least 18 years or older
  • High School diploma or equivalent
  • Two (2) years of previous dishwashing or stewarding experience
  • previous supervisory experience preferred but not necessary

While performing the duties of this job, the employee is regularly required to stand; use hands to finger, hands to feel; and reach with hands and arms. The employee frequently is required to walk; and talk or hear. The employee must frequently lift and/or move up to 10 pounds and occasionally lift and/or move up to 100+ pounds. Specific vision abilities required by this job include close vision, color vision, depth perception, ability to adjust focus, and distance vision.

The position is indoors; and is exposed to cold, damp, humid and/or hot conditions at times. The noise level in the work environment is usually moderate to loud. The staff member will work in a high traffic/high volume business environment and will be required to spend a majority of their time on their feet.
