To complement the hottest, freshest chicken, VIVA also prepares three Peruvian sauces daily at each restaurant - Aji Amarillo (Mild, Yellow), Huacatay (Medium, Green) and Rocoto (Hot, Red), plus a variety of sides and house-made juices. VIVA promises distinctive and flavorful menu items packed with inspired recipes in a vibrant, inviting atmosphere. Named one of Restaurant Business Magazine’s Top 50 Emerging Brands in 2022, Macchiavello and Garcia have grown to share their passion and remain a homegrown company that cares about its employees, guests and community. Based in Charlotte, North Carolina, VIVA Chicken has 17 restaurants across the Carolinas, Georgia and Utah with more to come.

We are looking for Kitchen Managers who will have a passion for serving the Hottest Freshest Chicken who would like to grow with us. Kitchen Managers start at $50,000-$60,000/yr. base salary. Total compensation with bonus ranges from $65,000 to $75,000 per year!

Requirements / Qualifications:

  • 2-3 years of culinary management experience in a high volume, fast-paced environment is helpful.
  • Responsible for operations and ensuring we are exceeding guest expectations with a passion for food safety, people, and service.
  • Mind set of maintaining a diverse, equitable, inclusive work environment filled with respect for all. We want everyone to feel like “I belong at Viva Chicken”!
  • Ability to handle multiple responsibilities at once including restaurant operations and catering events working with and through the back of the house team.
  • Responsible for recruiting, training, cross-training and retaining the kitchen staff as well as scheduling, giving feedback, and being collaborative explaining the WHY’ with staff.
  • Strong communication and organizational skills. Ability to mentor coach, teach and give feedback.
  • Commitment to food quality, recipe adherence, and consistency. Has a strong grasp of health and sanitation requirements and runs a Neat, Clean and Organized kitchen.
  • Strong understanding of cost controls within food cost and labor deployment of hours. Ability to follow established Best Practices.
  • Ability to teach and coach Shift Leaders to take on more responsibility and manage more effectively.
  • We are looking for candidates who have a proven track record of “People Development” and are excited about training and developing the team.
  • Must be able to reach, bend, balance and carry large objects within the kitchen repeatedly throughout your shift.
