NOW HIRING HEAD COOK

Camp Loud Thunder is seeking a Head Cook for their residential overnight Boy Scout camp adjacent to the Loud Thunder Forest Preserve in western Illinois.

Our head cook will be responsible for directing staff to prepare 3 meals a day for roughly 200 people per week. Must have experience overseeing staff, guaranteeing food safety with a history of working in an allergy aware kitchen. ServeSafe Certification Required.

Responsibilities include:

• Arrive on time each day.
• Monitor arrival of food supplies.
• Monitor and maintain freezer and refrigeration temperature levels.
• Maintain kitchen, food storage and dining area to meet BSA National Camp Accreditation Program and state health laws.
• Comply with the most current policies, procedures, and guidelines of BSA, state camp laws, and NCAP standards as applicable.
• Cook and prepare a variety of food according to production guidelines and standardized menus.
• Sets up workstation with all needed ingredients and equipment.
• Prepares ingredients by measuring, weighing, mixing, chopping, trimming, and peeling food items.
• Safely utilizes a variety of utensils including knives.
• Operates equipment such as ovens, stoves, slicers, mixers, etc.
• Bakes, roasts, broils, steams, and uses a variety of cooking methods on meat, vegetables, and other foods.
• Arranges, garnishes, and portions food according to established guidelines.
• Responsible for using correct portions when cutting, preparing, and serving items.
• Properly stores food by adhering to food safety policies and procedures.
• Label and date food according to the proper use by dates and top-to-bottom storage procedures.
• Evaluates food quality and preparedness by tasting.
• Record all food waste and dispose of properly.
• Cleans and sanitizes work areas, equipment, and utensils.
• Maintains excellent customer service and positive attitude towards guest, customers, clients, co-workers, etc.
• Complete appropriate end-of-season reports.

Additional Requirements:

• Experience working in a kitchen and ability to cook for large numbers of people.
• Ability to work with food service equipment and maintain a safe and orderly kitchen.
• Knowledge of and experience in food service: inventory, food preparation, buffet serving, cleaning and institutional kitchen equipment.
• Ability to work cooperatively with others.
• Complete required youth protection training and IL mandated sexual harassment training as assigned.

Job Types: Full-time, Contract, June 4th through June 30th, July 5th - 8th

Shifts: M - F, 7 a.m. to 3:30 p.m., Sunday, Noon to 6pm

Pay: $700.00 per week

Schedule may fluctuate as needs demand.

Education:

• High school or equivalent (Preferred)

Experience:

• Restaurant or School Experience: 1 year (Preferred)
• Cooking: 1 year (Required)
