Description:

The Executive Chef of the Pistons Performance Center is responsible for the exceptional execution of Customer Service by the entire Kitchen Department. They are responsible for overseeing department inventory, margin, labor budgets, pricing integrity, and merchandising standards. They will ensure all Team Members receive proper training and supervision. The Executive Chef will ensure the highest level of execution in regards to ordering, receiving, unloading, storage, rotation, merchandising and preparation of food.

What you will bring:

Ability to manage multiple projects simultaneously as a detail-oriented and efficient person.

Experience in a Leadership position, that includes proper rotation and labeling, food safety and sanitation, setting expectations, giving feedback and following thru on the needs of the Team.

Cooking experience

ServSafe Managerial certification preferred.

Flexible and able to switch tasks quickly.

Calm in stressful situations.

Excellent verbal and written communication skills.

Proficient in Microsoft Suite.

What you will do:

Oversee all team members including Catering specialist, FOH, BOH

Oversee all production for Catering, Hot Bar, Salad Bar, Sandwich Station

Oversee all catering events to ensure service is at a premium

Ordering all supplies and food items needed for Hot Bar, Salad Bar, Catering, Sandwich Station, including packaging and paper goods.

Creating a schedule to accommodate all production for catering & execution of catering event, hot bar, salad bar, sandwich station, managing labor cost

Follow all food safety and sanitation S.O.P.’s

Cooler temperature / dish machine logs

Daily food temperature logs

Keep kitchen clean and organized

Keep catering department clean and organized

Responsible for holding team members accountable, reviews, time off request, training, coaching, mentoring, disciplinary documentations

Responsible for keeping a purchase journal and maintaining an acceptable margin based on Plum policy

Act in a professional manner with good communication skills. Follows proper dress code. Leads by example

Responsible to oversee the retail program. Ensure it is up to Plum Market standards.

Oversee inventory process. Submit it to the directors once verified.

Oversee the point of sales with basic understanding of how to problem solve the units.

Weekly calls with VP and Director to review operations
