Job description

This role will support the Installation Support Services (ISS2) contract support on Wake Island.

This position will require that the employee work on site at Wake Island. Transportation from Honolulu, Hawaii to Wake Island will be furnished by government sponsored aircraft. Meals and housing will be provided by the program while working on the island. Employees will live in a dormitory housing environment and meals will be furnished daily through the cafeteria commissary. This role is perfect for someone who is able to remain away for long periods of time while working on island with occasional scheduled trips back to Honolulu.

Key Role:
Candidate is responsible for instituting and monitoring quality control and quality assurance of policies, standards and procedural implementations set forth by the USDA standards and codes, the candidate works with other cooks to produce high quality means in a clean and sanitary work environment.

Essential duties and job functions

• Prepares and cooks quantity of good according to the menu and number of customers
• Initiate and/or approvers significant menu changes
• Plans and organized meals for special occasions
• Monitors overall quality, preparations, production, and presentations of food for all locations, functions and special events.
• coordinates menu planning and adjustments
• monitors adherence to proper labeling and dating of food and adherence to recipes and proper cooking techniques
• Coordinates placement of weekly food order; orders fresh produce as needed.
• Monitors availability of ingredients; makes adjustments when necessary.
• Ensures all employees engage in proper food handling methods, proper hygiene, and that the facilities standards are in accordance with USFDA standards and codes.
• Monitors compliance with safety and sanitation standards with in the kitchen service area and dining area in conjunctions with the cooks and mess attendants.
• Ensures compliance with USDA, CACFP, and all pertaining standards policies, and regulations.
• Assigns work to cook I as needed
• Performs other duties as assigned.

Accountable for:

• Food handling techniques, personal hygiene standards, and safe work procedures.
• Recipe construction.
• Diet principles.
• Sanitation standards and procedures to prevent contamination
• Counting inventory
• Maintaining a food handler's card

Requirements

• High school diploma or equivalent
• Ability to understand, speak, read and write English
• Five (5) years of previous food service experience in a commercial or institutional environment
• Three (3) of the five (5) years must have been as a cook with menu planning and responsibilities.
• Ability to pass a pre-employment physical, drug screen, provided evidence of immunization, and be free of communicable diseases.
• Must be able to lift up to 35lbs.
• NACI or equivalent for country of origin

Preferred

• Computer experience for menu, inventory and supply recordkeeping
• Graduated of culinary arts
