Position Overview

Mike's Country Store is seeking a full-time Meat Packer for our Southern Meat Processing Division. The successful candidate will ensure compliance with safety, quality, and sanitation requirements. Meat packers are responsible for wrapping, grinding and packing meat. They occasionally have to shave or wash animal meat before packing, inspect meat or meat products, use hand or power tools and grind meat to prepare sausages, luncheon meats and other types of meat products. Sausage making is a primary duty, which includes grinding meat with special spices and herbs stuffed into natural or synthetic casings that pass through a casing-running-machine. This work will require proper following of recipes and sanitation procedures. The job may require working early shifts and long days on occasion, totaling more than 40 hours per week.

Required

  • Must be able to pass a drug test
  • Driver’s License preferred
  • 1-2 years meat processing experience preferred
  • Must have the strength to lift, pull, push or carry heavy objects up to 30-60 pounds and do the packing of the meat. Ability to stoop, bend and twist. Arm and hand steadiness is also an important skill.
  • Ability to stand most of the shift and walk/stand constantly
  • Ability to perform responsibilities in a safe and efficient manner
  • Must know and comply with the techniques used to store and handle meat products. Must also know how to handle raw materials
  • Follow all safe food handling practices
  • Willing to work in a refrigerated environment (less than 40 degrees)
  • The ability to work with inside conditions that include exposure to moderate noise levels
  • Strong written and verbal communication skills
  • Reading comprehension skills are needed to understand written instructions
  • Active listening skills are needed to give full attention to what other people say and to fully understand them
  • Must be able to multi-task
  • Take ownership for your own personal safety and the safety of all Members working around you. Ability and openness to work in other production line/rooms within the facility when this specific line is not running production
  • Necessity and ability to learn and share learning with others
  • Must have the ability to maintain a cooperative and positive attitude on the job

Common duties include:

  • Learning and operating all positions on the lines, including labeler and wrapping machines, casepacker, casings, smokehouse and meat delivery on grocery store route
  • Comply with the techniques used by Southern Meat Processing to safely store and handle meat products
  • Stuffing separate meat and by-products
  • Inspect meat products for defects, bruises or blemishes and remove them along with any excess fat.
  • Process prime parts into cuts that are ready for retail use, e.g. using knives, cleavers, meat saws, bandsaws or other equipment.
  • Operation and maintenance of hand or power tools, mixers and meat grinders to prepare sausages, hotdogs, luncheon meats and other types of meat products.
  • Operation of casing-running machines that grind the meat and stuff it into the sausage casings
  • Dry curing meats with curing agents such as salt, sugar or sodium nitrate. The curing is done in our onsite smokehouse
  • After curing the meat: Bacon – use machines that slice and mold, then weigh and package; Sausage – weigh and package
  • Operating packaging machine equipment
  • Measuring, weighing and counting product materials and ingredients
  • Check products to ensure they are up to standards.
  • Monitor machines and equipment, and adjust if necessary.
  • Moving or lifting heavy objects, loading, unloading or stacking products or materials
  • Responsible for sorting manufacturing materials or products
  • Recording product, packaging and order information on forms and records
  • Maintaining and cleaning equipment and tools, work stations, including the overall processing facility, in order to preserve a clean and safe work area and foster Southern Meat Processing’s goal of zero workplace accidents
  • Staying up-to-date with safety and sanitation procedures
  • Compliance with applicable State and Federal governmental safety and standard regulations (OSHA, FSIS, USDA, HACCP, EPA, etc.)
