Company Overview

A new manufacturer of cannabis-infused beverages located in Lemoore, CA. The products include lemonade, sodas, tea, and more types of RTD. The facility is regulated by the Cannabis Control Board of California, and the products distribute through licensed cannabis dispensaries in California.

Position Overview:

The food scientist leads new products development from concept to launch, including prototype development, formulation trials, sensory evaluation, shelf-life test, regulatory reviews, supplier relationship management, quality assurance, and coordinate with cross functional teams through the scale up process. The products include wide range of RTD (soda, tea, dairy-alternative, etc.) and cannabis emulsions.

Pay: $80,000-$120,000 + performance bonus

Reports to: Chief Scientific Officer (CSO) & Operations Manager

Location: Lemoore, CA

Duties:

  • Lead the formulation, prototype development, shelf-life testing, and transition for scale up of new products in a wide range of RTD types such as soda, sport recovery drink, dairy-alternatives, tea, coffee, etc. New products also include cannabis liquid-soluble emulsions.
  • Lead the HACCP team. Identify new potential hazards and update HACCP plan accordingly and timely. Communicate the updates to the Operational Manager, production managers, and department leads and ensure any update is adopted by all employees.
  • Lead the implementation, maintenance, and ongoing improvement of SQF systems.
  • Build & maintain an ingredient and flavor library working with vendors to aid rapid prototyping; Build a portfolio of vendors in each category above
  • Lead/conduct sensory evaluations and report the CSO and Executive Board; Working knowledge of sensory methodologies and interpretation of results desired
  • Lead/conduct shelf-life and stability tests
  • Provide label information such as ingredients list, nutritional facts, and dosing instructions to label designer and label compliance coordinator.
  • Establish and verify new product design and specifications upon execution in respective manufacturing plants
  • Conduct product formula filings and develop accurate labels as applicable
  • Coordinate packaging corrosion testing.
  • Collaborate with Marketing and innovation teams to refine product brief
  • Work in close collaboration with other R&D sites to learn and share knowledge and best practices
  • Network with internal and external stakeholders for enhanced ingredients, technologies, and training
  • Troubleshoot product/process problems as required in the laboratory during product development process and scale-up
  • Serve as product development lead in cross functional project team meetings
  • Working knowledge of cannabis beverage regulations for new innovation initiatives
  • Collaborate upfront with regulatory/legal departments to ensure compliance in both formulation and packaging
  • Keep product development timeline
  • Develop and maintain reliable suppliers
  • Implement Good Lab Practices in R&D and QA lab
  • Lab bench work and pilot plant work as needed
  • Maintain accurate, up to date records, hardwired or digital lab notebooks
  • Purchase and maintain lab equipment
  • Track budget on own and report for lab spend

Desired Previous Job Experience:

  • Formulation development (from bench to commercial) and maintenance in RTD beverages, dairy, or dairy-alternatives.
  • Process development and validation in RTD beverages, dairy, or dairy-alternatives.
  • Quality management experience in RTD beverages, dairy, or dairy-alternatives.
  • R&D experience in emulsions or emulsifiers.
  • SQL & HACCP

Qualifications:

  • Ph.D. or M.S degree in Food Science desired (or Bachelors w/significant experience)
  • 3+ years in beverage product manufacturing for the consumer product (beverage/dairy/dairy-alternative preferred)
  • Experienced with Safe Quality Food Programs (SQF) System
  • Experienced with HACCP (Hazard Analysis and Critical Control Point)
  • Food and beverage product development
  • Previous appreciated experience: Beverage, dairy, or dairy-alternative products

Working Conditions:

  • Uniforms and PPE are provided and expected to be worn
  • Some work area temperatures are hot/cold based on the outside temperature.

Job Type: Full-time

Pay: $80,000.00 - $120,000.00 per year
