Part of the Culinary team the EDR Attendant is Responsible for the Employee Dining Room and the Employee Meal for Lunch and Dinner. The Attendant takes care of the dining facilities keeping them clean and stocked. The position is also responsible for presenting the meal, keeping the buffet stocked and the recovery of the unused product. During the Meal period the Attendant is also responsible for keeping track of Employee Sign and keeping food and plate wear from leaving the E.D.R.. The E.D.R. Attendant takes care of the needs of our fellow employees through restocking of items in the room such as but not limited to napkins, salt and pepper etc

Duties

Opening (To prepare the E.D.R. for service)

Clear and Clean off the Beverage Counter

Wipe off Tables

Refill Napkin Containers

Refill Ice Bin

Refill Salt and Pepper Shakers

Take dirty dishes to dish room

Sweep and Mop E.D.R. if necessary

Check and refill if necessary Hand Soap and Paper Towels

Sgt-Up (TO lay out the Employee Meal for Service)

Turn on the Cold Table

Stock Plate ware, Silverware, and Glasses

Lay out E.D.R. Menu and Sign in sheet

Set up the Cold Bar

Set up the Hot Bar

Complete set up by 11:00 a.m.

All Menu and Flatware must be ready by 11:00a.m.

Service 11:00a.m. to 1:30p.m. (To attend to the Duties necessary for the Employee Meal)

Take the full bus tubs to the Dishroom as they become full. Wash the plateware and Silverware if the Stewart is not available

To restock the Plateware, Flatware, and Glasses as the Meal goes on.

To make sure all employees sigh in for the employee meals

To control the removal of food, plates or glasses from the Employee Dining Facilities

To Assist in the continuous flow of food and employees thru the dining room

Clean Up and Recover 1:30p.m. (To reset the E.D.R. for Evening Service)

Take the Full bus tubs of dirty dishes to the dishroom

Cover Cold Items and refrigerate

Cover hot items and return them to wall warmer in the back of the kitchen

Wipe down the Cold table

Wipe down Hot table

Wipe down E.D.R. Tables and Chairs

Wipe down the Beverage Counter

Sweep and mop the E.D.R. if necessary

Restock the Flatware, Silverware, and Glasses as the Dishroom has them ready

Weeklv Tasks

Clean Stand up Warmers

Clean Wall Warmers in the Back of the House

Polish the glass cabinet in E.D.R.

Sweep and Mop the Utility Hallway

Evening Meal 4:30 p.m. to 8:00 p.m.

Refill the ice Bin

Turn on the cold Table

Turn on Hot Table

Check and Refill Cold Item

Set out the Hot Items

Closing Duties 6:00 p.m.

Take all dirty dishes to the Dishroom Food is to be refilled before the Attendant leave

Wipe down the hot and cold tables

Fill the Ice Bin

Make sure the Menu and Sign in Sheet are available on the Attendant Table.

The E.D.R. Attendant is a position that is focused on the Employee as the customer. Their responsibility is the condition of the EDR its cleanliness, restocking and recovery of the facilities. They are the attendant to the Employee Meals. To set up the Buffet, refill the Buffet and Recover the Buffet once completed.

No electronic devices can be used by the attendant during service. Just as the rest of the Hotel Employees cannot carry Electronic devices while working, the E.D.R. Attendant must not become distracted from their job of E.D.R. Attendant.

The replacement of items necessary to the Buffet and Service to the Employee Meal should be done quickly. The need for a smooth meal to the employee is just as important as any guest. Our Focus in the EDR is on a comfortable dining experience it can only be achieved by the quick professional behavior of the EDR Attendant.
