The department of Dining Services at West Virginia University is currently accepting applications for a Dietician.

About the Opportunity

The Dietician reports to the Director of WVU Dining Services setting policies and procedures within the guidelines of Dining Services Strategic Plan as it pertains to all nutritional aspects including but not limited to: Food Allergies, Nutritional Counseling (Medical Nutrition Therapy – Eating Disorders – Weight Loss/Gain, etc.), Food Labeling and Nutrition Education across campuses for Residential Dining, Catering and Retail operations. This position coordinates nutritional care for any and all WVU Student Health, WellWVU and WVU Carruth Center. The Dietician plans, develops and consults on all menus and standardized recipes utilized within Dining Services. This position will counsel WVU students/staff/faculty on special/medical dietary needs and weight management, develop and continually expand Dining Services’ nationally recognized “Healthy U” program, and maintain the computerized inventory for 21 locations.

What You'll Do

  • Set policies and procedures within the guidelines of Dining Services’ Strategic Plan with regard to all nutritional aspects of menu development for Dining Services’ Residential Dining, Catering and Retail operations. For Catering and Residential Dining, advises on special requests for vegan, food allergies, diabetic circumstances as demanded by Catering clientele.
  • Participate in the development of short- and long-range goals and objectives with the implementation of the policies and procedures for Dining Services along with other Assistant Directors of Dining Services and other managers throughout the department. Plan and implement strategies for accomplishing short- and long-range goals.
  • Develop the daily, weekly, monthly, and annual menus and menu cycles ensuring proper nutritional value for 6000 residents and 2000 off campus meal plan holders. Consider seasonal market availability of foods according to patron preferences, caloric content, and food costs during the establishment of menus. Oversee and assures that menus are posted on the Dining Services' webpage on a timely basis. Develops cycle menus specific to each dining hall.
  • Develop, maintain and implement the Wellness Program to ensure health screening and education for Dining Services including re-certification of the Wellness Program every 2 years. Organize Health Fairs/Health Screenings which monitors weight maintenance, blood pressures, body fat analysis and educates on all health matters.
  • Oversee and assist in the development of electronic nutrition information including but not limited to: Social Media (Facebook- Twitter), podcasting, QR codes and smartphone aps.
  • Serve as Staff Advisor and sets policies and procedures for WVU Student Organization GF@WVU a student organization developed to serve as a resource for those students attending WVU who maintain a gluten free diet.
  • Develop the nutrition information for the Wellness Centers located in Board Plan and Retail Operations which includes nutritional brochures, charts and up-to-date trends on nutrition and health.
  • Serve and act as the Medical Nutrition Therapist contact for WVU Carruth Center and WVU Student Health Services at the WVU Health Science Center for the entire WVU student population. This consulting deals with a wide variety of medical conditions including but not limited to: Weight gain/weigh loss, Diabetes, Eating Disorders, High Blood Lipids, Chron’s Disease, Celiac Disease, etc.
  • Plan and develop standardized recipes for each food product included in food service menus for all operations throughout Dining Services. Extend recipes to serve large quantities. Evaluate recipes in current use and makes adjustments as necessary. Train Food Service Managers, Supervisors, Lead Workers, Workers and Assistants in the proper use of the recipe. Test new recipes and food items by preparing the items, making necessary adjustments to the recipe and offering recommendations on acceptance or rejection of recipe.
  • Maintain the computerized menu management and recipe development system for the nutritional quality of a items served.
  • Check the recipe report for portion costs and reviews menu cycle reports. Establish standards of quality, quantity and portion control. Train Food Service Assistants in correct portion and service of food products.
  • Consult and meet with residents of WVU's campus community either one on one or in group settings arrangedby Resident Faculty Leaders for their residents which may be late into the evening.
  • Is the liaison for the WVU Parents' Hot Line dealing with complaints and concerns of students’ health/eating habits.
  • Is the main contact for WVU Disabilities Services dealing with parental concerns and complaints of their students' dietary habits whether it is a medical or a habitual situation.
  • Maintain nutrient data information in designated food service database system (Food Processor and CBoard) as new inventory items are added. Use nutrient analysis reports to keep clientele informed on nutrient analysis of recipes for all products served.
  • Plan modified diets for student clientele as required. Maintain Foodservice Database System: Inventory Control, Production System and Nutrient Analysis. Train personnel in upkeep of reporting systems to maintain inventory history reports.
  • Serve as the professional advisor to the WVU Student Wellness Advisory Board (SWAB) for the development, support and implement health related goals and objectives among the WVU community. Serve as the Chair of the Nutrition Implementation Committee as appointed by the Vice President of Student Affairs.
  • Serve as the Nutrition Expert for WellWVU. Work with WellWVU on tabling events, wellness events (Chillfest, etc), advertising materials on campus, and filming recipes for social media.
  • Oversee the internships of 12 - 15 Dietetic Interns that are assigned to Dining Services for a period of 6 interns for 16 weeks and 6 for a twelve-week period. Dictate the interns schedule and assures their completion of mandatory tasks assigned by the Academy of Nutrition and Dietetics for eligibility to sit for the national board exam qualifying each candidate to practice as a Registered Dietitian.
  • This position investigates researches, writes and submits all grants for Dining Services programs.
  • Research, formulate and submit grant funding for existing, expanding and possibly new programs for enhancement and quality improvement.
  • Continually monitor current wellness trends and training for Dining Services' management and service personnel including in-service training, webinars and podcasting, etc.
  • Plan special events and monotony breakers including: developing and promoting a theme, researching appropriate food items, setting a menu and developing recipes.
  • Assist with writing food specifications used by the purchasing unit to procure the highest quality of food items for the best price. Serves as liaison between management and vendors to introduce new inventory items. Ensures proper training to those responsible for upkeep reporting of food cost records in database. Assist with marketing menus, nutritional analysis, and special meals.
  • Guest lecture across campus for organizations such as the Student Recreation Center, Resident Faculty Leaders, Parents' Club University, the Law School, Student Dietetic Asso., Student Government Asso. and all WVU Athletic Club Teams or any WVU organization that may request a speaker.
  • Campus outreach including interviews on campus radio, for campus paper, and with journalism students. Presentations for different student groups such as Honor’s Dorm, Fraternities/Sororities, and floor presentations for students in dorms.
  • Serve as preceptor for dietetic interns both WVU students and distance interns. Serve as mentor for dietetic students who need experience shadowing a dietitian.
  • WVU Student Recreation Center: Is the contact for the Rec Center's "Ask the Expert'' and their Wellness blog providing professional nutrition counseling serving the student population being sensitive to time restrains.
Qualifications
  • Bachelor’s degree in nutrition/dietetics. Masters degree in Nutrition or related field preferred.
  • A minimum of two (2) years of experience involving:
    • Experience in varied aspects of wellness programming (to include training and presentation experience).
    • Experience in clinical dietetics required (large scale food service menu development experience, preferred).
  • Demonstrated skills at determining the standard nutritional value of foods and evaluating food content.
  • Demonstrated skills at explaining food preparation and production and proper food handling and sanitation guidelines.
  • Demonstrated knowledge of menu development.
  • Demonstrated excellent skills at communicating orally and in written format.
  • Demonstrated skills at using a computer for basic programs.
  • Demonstrated counseling abilities to deal with health issues of clientele.
  • Demonstrated knowledge of grant writing and submission.
  • Demonstrated supervisory skills.
  • Demonstrated ability to analyze and solve problems.
  • Strong conceptual, strategic, implementation and visionary skills.
  • Must have the ability and judgment to manage confidential information.

Requirements
  • Must be a Registered Dietitian with the Academy of Nutrition and Dietetics and maintain certification through Continuing Education Units (CEU) of 10 units per year and 75 units over a period of 5 years to be verified by West Virginia Dietetic Association.
  • Valid driver’s license (visits all dining locations on Morgantown campus along with regional campuses)
  • Sanitation Certification.
  • West Virginia Department of Health Food Handlers Permit (required within 30 days of employment).
  • Must be Health Insurance Portability and Accountability Act (HIPPA) certified/compliant.
