The Culinary Professional is responsible for planning and directing food preparation in a kitchen. This will involve a large degree of supervising other kitchen staff. As assistant to the Executive Chef and Sous Chef, the CP will help with inventory, and managing of supplies as well as aiding to make sure the kitchen is up to safety standards and that staff are obeying sanitation rules. During mealtimes, it is important that the CP be quick on their feet and be able to make smart decisions instantly.

ESSENTIAL FUNCTIONS AND RESPONSIBILITIES:

1. Prepares food to specifications before and during operations.

2. Properly measures and portions all food items. Complies with all portion sizes, quality standards, department rules, policies and procedures.

3. Cooks all food to Proper specifications in a timely manner. Ensures proper food temperatures are maintained and food is stored correctly.

4. Utilizes kitchen equipment to prepare food items such as: knives, slicers, whips, pots, pans, warmers, steamers, grills, ovens, etc.

5. Ensures freshness and quality of all menu items.

6. Performs opening or closing duties as well as side work duties as instructed and according proper guidelines.

7. Keeps workstation and equipment clean, organized, sanitized, and sufficiently stocked.

8. Follows and upholds all health codes and sanitation regulations.

9. Uses waste control guidelines and records all waste on spoilage sheet. 13. Ability to work varied hours/days, including nights, weekends, and holidays, as needed.

10. Performs other duties assigned.

Position Requirements:

  • High school or GED equivalent required, formal culinary training or associate degree in culinary arts preferred
  • Minimum 2-5 years cooking experience in a fine dining environment and experience in a culinary leadership role preferred
  • Ability to communicate clearly with managers, kitchen and dining room employees, and guests.
  • Safe Food Handling Certification
  • Ability to bend, stand, and stoop for long periods of time, and working long hours in hot conditions

The Culinary Professional will have the ability to maintain a calm, composed presence in an often fast-paced environment where multiple tasks, events and stimulus may occur simultaneously. They must possess the ability to define problems, collect data, establish facts and draw valid conclusions in a fast paced environment.

Job Types: Full-time, Part-time, Temporary, Contract

Pay: $17.00 - $20.00 per year
