Job Title: GSFP Kitchen and Culinary School Manager

Good Samaritan Shelters is seeking an experienced head cook and teacher/trainer to manage a commercial kitchen and culinary school in Santa Barbara County.

About the Sponsor

  • Good Samaritan is a growing non-profit organization providing temporary housing and extensive support services to the homeless and those in recovery in Santa Barbara County. Good Samaritan has embarked on a comprehensive Good Samaritan Food Project (GSFP) to grow its own nutritious produce, use that produce to feed its own residents, prepare meals for service to outside customers, and teach residents and the public to prepare and serve food.
  • Phase one of the GSFP is underway, specifically the start-up operations of a farm in Lompoc. This includes three large greenhouses and adjoining acreage suitable for growing fruit and vegetables in sufficient quantities to serve Good Samaritan’s shelter residents and much more. A Farm Manager has been hired and is planning the first crops to be planted this spring for first harvest in late summer.
  • Phase two is the opening of two upgraded commercial kitchens that will prepare meals for six shelters that serve approximately 400 meals per day. The first kitchen is to be completed in June in Santa Maria. The school will begin in that facility and expand to the second kitchen location in Isla Vista, once the work there is completed in January 2024.
  • Within one or both kitchens will be the school that will teach meal preparation and serving skills, first to shelter residents and then to the eligible general public. There are three goals for the school; nutritional health awareness, training to prepare food for Good Samaritan facilities, and job training and placement for food service jobs outside of Good Samaritan.
  • On the opening of the second kitchen, it is expected that the school will be able to add staff and be opened to the eligible general public. The school will then take a material external focus on recruiting applicants and placing graduates with employers outside of the Good Samaritan system, as well as work on developing outside institutional scale customers for meal service from Good Samaritan kitchens.
  • The Good Samaritan Food Project (GSFP) seeks a full-time, benefited Kitchen and Culinary School Manager for its kitchens and school. Students will be taught skills for employment in various food service related positions such as restaurants, bakeries, catering, produce markets, etc.
  • As Kitchen Manager, the position requires preparation of meals for delivery to Good Samaritan shelters in Santa Barbara. A separate Food Coordinator will pack and deliver the meals. Over time, this responsibility is expected to grow to identify and serve large-scale customers outside of the Good Samaritan system.
  • As School Manager, the hire will be teaching students who may have no experience in food service, and need bottom-up instruction on fundamental technical skills, knowledge and interpersonal skills necessary to work in an active kitchen and hospitality-oriented environment. The Manager may interact with Good Samaritan case managers coordinating other services to students from Good Samaritan facilities.
  • The School Manager will lead the entire operation of the GSFP’s school program, including student selection, curriculum, instruction and scheduling, as well as stock, manage, and maintain the necessary class needs and kitchen equipment. Over time, the Manager will initiate outreach to identify placement opportunities for school graduates.
  • Good Samaritan has contracted with Fare Start, a Seattle-based organization with decades of experience teaching food service skills to underserved populations. Fare Start will assist in creating curriculum, operating manuals and teaching materials.

Duties

  • Hands-on meal production of approximately 250 meals per day, growing over time
  • Manage kitchen stocking and storage
  • Provide instruction to students through virtual, classroom and on-the-job training
  • Teach hands-on fundamental technical skills and knowledge needed for working in our food businesses (knife skills and safety, sanitation, stacking order, food safety, portioning, recipe adherence, teamwork, following directions, sense of urgency, attendance, etc) in both a group and individual setting
  • Responsible for organization and cleanliness of classrooms and training kitchen
  • Provide students ongoing coaching and feedback to support them in their skill development and achieving their goals
  • Make recommendations for, and support the development of adjustments to the curriculum to increase student skill-building
  • Build trusting, positive and communicative relationships with kitchen leadership and case managers to support students and address areas of concern
  • Identify and provide emergency crisis intervention for students as warranted
  • Ensure timely and accurate entry of student data and completion of paperwork to meet all organizational requirements
  • Actively participate in meetings for student support, program development, organizational information, training, etc
  • Perform all tasks in accordance with the GSFP’s Safety and Wellness Protocol and responsibly work to enhance that program
  • Participate in future efforts to identify new external food service customers
  • In 2024, conduct outreach to employers as placement options for school graduates
  • Other duties as assigned by the GSFP Director
  • Participate in the GSFP community outside of the kitchen operations, or as described in the Staff Personnel Policy

Qualifications

  • Relevant food service and cooking experience
  • Associates Degree or equivalent
  • Ability to maintain clear personal and professional boundaries
  • Ability to work effectively in a constantly changing and sometimes demanding or chaotic environment
  • Experience working with a diverse population, with sensitivity to differences in culture, religion, sexual orientation, race, age, and mental and physical illness
  • Ability to remain alert and and on duty throughout shifts
  • Ability to respond responsibly in emergency and crisis situations
  • Ability to communicate well both orally and in written form, and follow detailed instructions
  • Computer skills including use of Windows Office, Microsoft Word, Microsoft Excel with the ability to navigate through software programs
  • Management of others in a fast paced school or restaurant environment
  • Local applicants preferred
