POSITION OVERVIEW:

The Assistant Restaurant Manager/ Banquet Captain of the Twin Mills Club at Trilogy at Lake Norman oversees the operation of all Club Food & Beverage Outlets to include food and beverage staff, and coordinates with executive chef to provide courteous and rapid service to our guests. In addition to day-to-day restaurant operations, the Restaurant Manager is responsible for strategic and future planning as it relates to all F&B initiatives within the club. Including, but not limited to areas of capital expansion, business planning, branding, menu/restaurant design and the creative and conceptual development of new F&B experiences.

KEY RESPONSIBILITIES:

· Directly supervise team; this will include planning, assigning and at times performing activities of workers supervised.

· Ensure that superior standards of food service are at all times meeting the requirements of our guests.

· Attend culinary exhibitions and educational seminars to stay abreast of the development in the Food & Beverage industry.

· Meet with staff at all levels to plan for future restaurant functions as well as the needs of the current expectations.

· Responsible for cost of goods, labor, and general expenses of food and beverage operations.

· Responsible for enforcing proper cash handling procedures for the F&B department; ensuring funds are collected, accounted for in a timely manner.

· Supervise all activities in the dining room to ensure every member receives excellent service.

· Interview, select, and train servers and bartenders. Serve as a mentor for team leaders.

· Communicate with members regarding their dining experience. Relay relevant information to the service staff, Executive Chef, Clubhouse Manager, General Manager, etc. as necessary.

· Schedule staff according to the Club’s business needs.

· Open and close the Club as directed.

· Remain up-to-date and knowledgeable regarding Club menus and events.

· Assist with monthly inventory.

· Proof and correct staff hours for payroll.

· Receive and resolve complaints concerning food, beverages, and service.

· Confirms all side work and closing procedures have been completed.

MINIMUM REQUIREMENTS / QUALIFICATIONS / SKILLS:

· Four to ten years related experience and/or training; or equivalent combination of education and experience.

· Ability to write reports, business correspondence, and procedure manuals.

· Ability to effectively present information and respond to questions from groups of managers, clients, guests, and the general public.

· Computer literate with good knowledge of Microsoft Office.

· Good verbal and written communication skills.

· Food Handlers Card and Completion of Alcohol Training Program.
