The Brass Tacks: General Duties & Responsibilities:
  • Provides domain-specific, general counsel and support to general managers and operational leaders as a subject matter expert. Assists in developing key areas of property support identified by GM’s, area managers and SSC Senior Leadership.
  • Provides ongoing tactical support (focusing on execution of day-to-day operations and business plans)
  • Works with property leaders in the development and implementation of financial plans and annual budgets, building out property financial recovery plans comprised of best practices from SSC leadership. Comprises tools and time sensitive benchmarks for property leadership with the intent to create fiscal oversights and direction to establish a successful financial model as defined by key stakeholders.
  • Participates in F&B Team Leadership growth initiatives, including:
  • Building a network of talent for all levels of F&B and facilitating internal networking and inter-property transfers
  • Partners with Talent Acquisition and operational leaders to “build the bench” of F&B task-force members that provide property support as needed.
  • Partners with Talent Acquisition and consults General Managers and Senior Leaders on all F&B hires.
  • Leads in the operation of a comprehensive Task Force Development Plan, in collaboration with Talent Acquisition and operational leaders, instituting a solution based workable plan of best practices to address acute property needs in real time.
  • Co-leads Work Group growth by establishing quarterly work groups focused on growth and development of high potential leadership team members, placing emphasis on key initiatives and best practices. Committees should constitute the following cohorts: Financial Planning and Profitability, Property Innovation/Standards Leadership Development and Sustainability.
  • Establishes and maintains standards for food and beverage quality, presentation, handling, sanitation and safety in alignment with property standards and applicable regulations. Responsible for ensuring necessary training and continued monitoring of these programs, in collaboration with operational leaders.
  • Co-leads with other Senior Leaders and takes charge of all purchasing programs particularly as it relates to F&B operations within a designated region. Assists in providing the necessary training and ongoing monitoring of these programs.
  • Initiates strategic planning and solutions to inspire Innovation/Brand Positioning and Creative Concepting to include the development and deployment of F&B Concept Statements, Innovation Initiatives, Guest Facing Technologies, Legacy Successes, industry research and development/trends.
Essential Duties & Responsibilities:
  • Establishes and oversees the standards for planning, designing, implementing and controlling food and beverage operational expenses at assigned assets in order to continuously improve quality and profitability.
  • Drives select regional F&B/Restaurant & Bars-focused initiatives
  • Establishes and ensures that all applicable standards, procedures and policies for food & beverage quality, presentation, handling, sanitation, service and safety in alignment with Columbia Hospitality, local property standards and regulations are fully implemented in all departments.
  • Develops and implements policies and procedures to ensure quality of all F&B assets, products and work practices in an effort to exceed established standards.
  • Provides ongoing support to Senior Leaders, and General Managers in their efforts to manage the composition, preparation, presentation and positioning of food and beverage programming and development in according to established standards
  • Assists in the evolution and implementation of creative operational programming reflecting CH and local property/market standards of quality, consistency, and execution.
  • Selects, supervises, trains, develops, schedules, disciplines, and coaches staff on performance, safety, sanitation, food handling and service standards. Demonstrates positive leadership characteristics that empower and inspire employees to meet and exceed standards
  • Assists in the selection, supervision, training, and development of food and beverage managers and associates. Demonstrates positive leadership characteristics that empower and inspire employees to exceed standards.
  • Provides timely ongoing feedback to individual F&B team members who report directly to property leadership within the designated region in alignment with the performance feedback policies and procedures in partnership.
  • Directly participates with property leaders in reviewing annual reviews of select property food and beverage leadership.
  • Leads succession planning for food and beverage leadership, advises on interim leadership and transition plans. Works in conjunction with People & Culture and Senior Leaders to develop programs to identify talent and fast track future leaders.
  • Works in partnership with all purchasing or procurement vendor loyalty programs and develops relationships to drive successful companywide fiscal minded programs. Establishes corporate guidelines to ensure proper quality specification and standards.
  • Provides guidelines to establish and maintain budgeted food, beverage, and labor costs. Assists onsite to support guidelines and integration and adherence.
  • Provides feedback on all annual operating, capital budget, directly related to food and beverage operations.
  • Works with media outlets, as required, for each property and participates in developing F&B strategic marketing plans for each property.
  • Drives New Business/Development opportunities both regionally and nationally and assists in the development of all food and beverage programming on new ventures.
  • Participates in the business development process for food and beverage operations. Assists and supports in the development of programs and team members for new property openings and/or acquisitions. All development projects are worked in tandem with other directors as collaborations.
  • Assists and advises on all regional F&B operations, investments, Capex, renovations and purchases.
  • Deployable resource for F&B, including but not limited to: operations support for transitioning or opening properties, or other Task Force assignments as needed
The Nitty Gritty:
  • A hotel management or culinary arts degree and/or equivalent training with eight or more years of multi-outlet restaurant FOH and General Manager experience (at Dept or Div Head or Regional Restaurant GM level).
  • Experience opening & reconnecting operations
  • Strong craft bar & beverage experience required
  • 25% travel required in designated region within Columbia Hospitality portfolio
  • Tech proficiency in F&B systems. (Back-end command to configure and customize systems)
  • Working knowledge of culinary trends with a focus on quality, production, sanitation, and presentation.
  • Strong communication skills, including the ability to write contracts, reports, business correspondence, and operations manuals
  • Strong interpersonal communication and platform skills, including the ability to effectively present information and respond to questions from team members, managers, clients, guests or the general public
  • Strong general management skills, including time management, information analysis, planning and organizing, decision making, problem solving, and delivery of results
  • Strong F&B business acumen, financial management skills, including budget management, expense control, forecasting and analysis of financial statements. Ideal candidate possesses a strong history of metric achievement of KPIs across multiple performance
  • Strong people management and leadership skills, including coaching, motivating, delegating and relationship-building
  • Proficiency with technology; including but not limited to: MS Office Suite especially Excel & Outlook, project management software and other emerging platforms
  • Working knowledge of all applicable laws, codes and regulations
